Your bread will usually stay fresh on the countertop for 3-5 days. We do not recommend storing in the fridge, as it draws the moisture out of the bread. The fridge will cause your bread to dry out much quicker. Storage
On the countertop, keep your bread covered. Here are our favorite ways to store bread (and other baked goods) on the countertop.
Bread box Perfect for storing 1-2 loaves. It maintains a good level of humidity, keeping the bread soft for 3-5 days. We place our bread in the box with the cut side down or against the side walls of the box. There are many options, but here's the box we use and love (bonus: the lid functions as a cutting board!)
A reusable plastic-free alternative to plastic wrap, these are a large piece of cotton coated in a non-sticky beeswax blend. It sticks to itself, but not to the bread, and keeps your loaf fresh. Find these at the Bluebird Bread Co market booth most weeks, or order something like this one from Amazon.
Glass snaplock boxes For the small bits and pieces of cut loaves, or for things like scones, cookies, or english muffins, we like to use glass storage containers with locking lids. Costco usually has a great set for a good price. Here's another great option from Amazon.
Silicone Food Storage Bags Another reusable plastic-free option, silicone bags can hold a full medium-sized loaf. These gallon-sized bags are washable the versatile.
Ziplock bags Usually readily available, ziplock bags are very effective at keeping your bread and baked goods fresh for 3-5 days at room temperature.
Freezing
If you won't be able to finish your baked goods within 3-5 days, it freezes beautifully! It'll last in the freezer for up to about six months. You can freeze your bread whole or sliced. To freeze whole, wrap in parchment paper and plastic wrap, or just a couple of layers of plastic wrap. To freeze sliced, place a piece of parchment paper between each slice, and store in a silicone food storage bag or a ziplock storage bag.
Thawing
When you're ready to thaw your frozen baked goods, your whole loaves can be thawed at room temperature. Slices can be thawed at room temperature or in the toaster. Refreshing
After thawing your whole loaf at room temperature, it can be refreshed and warmed to restore it to its freshly-baked state with a crispy crust. To do so, run your whole loaf under running water for a couple of seconds to completely wet the outer crust (yes, it feels weird, but trust me!) Place your loaf in a 400 degree oven for about 10 minutes. Enjoy!
